Ingredients:
- 2 oz White Rum
- 1 – 1.5 oz Fresh Lime Juice (adjust to taste)
- 7-10 Fresh Mint Leaves
- 2-3 Passion Fruit (pulp and seeds) OR passion fruit puree
- 1-2 tbsp Sugar (or simple syrup, honey – see notes)
- Club Soda (to top)
- Extra Lime Wedge, Passion Fruit (optional), and Mint Sprig for garnish
Instructions:
- Muddle the mint, sugar (or simple syrup/honey) and lime juice in a tall glass or shaker. You can use a muddler or the back of a spoon to gently bruise the mint and release its flavors.
- Add the passion fruit pulp and seeds (or puree) and rum.
- Fill the glass with crushed ice.
- Top with club soda and stir gently.
- Garnish with a lime wedge, mint sprig, and a half passion fruit (optional).
Tips:
- If you don’t have fresh passion fruit, you can use store-bought passion fruit puree.
- The amount of sugar you use will depend on the sweetness of your passion fruit. Start with 1 tablespoon and adjust to taste.
- This recipe is for one serving. You can easily multiply the ingredients to make a pitcher for a party.
