Ingredients:
- ¾ cup granulated sugar (150g / 5.3oz)
- ⅔ cup fresh passion fruit pulp (from 4-5 passion fruits)
- 2 large eggs
- 2 egg yolks, from large eggs
- Zest of ½ a lemon
- 115 g unsalted butter, cubed and cold (½ cup / 1 stick / 4oz)

Method 1: Direct Heat (better for double batches)

Whisk Together Eggs and Sugar: In a medium bowl, whisk together the sugar, egg yolks, and whole eggs until well combined.

Heat Passion Fruit & Butter: In a separate, heavy-bottomed saucepan (preferably stainless steel), gently heat the passion fruit pulp, butter, and salt over low heat. Stir occasionally until the butter melts.

Temper the Eggs: Remove the pot from heat and whisk a few tablespoons of the warm passion fruit mixture into the egg mixture. This tempers the eggs and prevents them from scrambling when added to the hot liquid.

Combine and Cook: Pour the tempered egg mixture back into the saucepan with the passion fruit mixture. Whisk constantly over medium heat until the mixture thickens and coats the back of a spoon (about 7-8 minutes). Do not let it boil.

Strain and Cool: Remove the curd from the heat and strain it through a fine-mesh sieve into a bowl. This removes any cooked egg bits or passion fruit seeds. Let the curd cool slightly at room temperature, then cover the surface directly with plastic wrap to prevent a skin from forming. Refrigerate for at least 2 hours, or until chilled and thickened.
Method 2: Double Boiler

Whisk Together Eggs and Sugar: Follow steps 1 from the first method.

Set Up Double Boiler: Fill a saucepan with a few inches of water and bring it to a simmer. Place a heatproof bowl on top of the saucepan, ensuring the bottom of the bowl doesn’t touch the simmering water.

Combine and Cook: Add the passion fruit pulp, butter, and salt to the heatproof bowl. Whisk occasionally until the butter melts. Follow steps 3-5 from the first method (tempering the eggs, combining and cooking, straining and cooling).
Tips:
- Fresh is Best: While you can substitute store-bought passion fruit puree concentrate with some water added, fresh passion fruit offers a brighter and more vibrant flavor.
- Sweetness Level: You can adjust the amount of sugar to your desired sweetness level.
- Storage: The passion fruit curd will keep in an airtight container in the refrigerator for up to a week.
